We all love our favourite herbal teas – but as the days get hotter and we still want the comfort of our tea, why not make some wonderful herbal popsicle creations. Herbal popsicles, all the benefits of botanical health in a tasty treat.

The best part of making herbal popsicles is you can make any flavour you like, add in some superfood powders, dairy or non dairy and natural sweeteners and you can have everything from a herbal gelato style pop, an icy clean treat to a creamy and indulgent popsicle.

These icy treats will cool down and relax any kid or grown up.  Lavender is not only cooling to the body, it also calms tension, anxiety and irritable moods.

Hibiscus is also cooling to the body and the heart and gives these pops their delightful and pretty pink/purple colour. Enjoy this fun and refreshing way to enjoy your herbs throughout the summer.

Lavender Lemon Herbal Popsicle Recipe

Ingredients:

1 ½ cups Water

1 tbsp Lemon Juice

3-4 tbsp Maple Syrup

1 tbsp Dried Lavender Flowers

1 tsp Dried Hibiscus Flowers

Instructions:

Place the Lavender and Hibiscus in a mason jar or tea pot. In a separate pot, bring water to a boil and then pour over the herbs. Cover the jar and allow the herbs to steep for at least 15 minutes. Lavender can get bitter if steeped too long. Strain the herbs. Combine the resulting tea with the lemon juice and maple syrup until well combined. Pour into molds and place in the freezer for several hours. To remove from molds, dip the molds briefly in hot water and the popsicles should quickly release. Enjoy!
